Questions

Good to know.

What's the difference between Hatsu and Takami?

Hatsu is bold, robust and vegetal, with a gentle bitterness that holds its own through milk. Takami is smooth, rounded and umami, gentle in the cup and just as good whisked straight. Both are first-harvest Ceremonial Blends, stone-milled in Uji.

New to matcha. Where should I start?

Start with the Discovery Duo. You get a tin of each, so you can try both and see which you prefer. Order on jukuaustralia.com.au.

How long does a 30g tin last?

At our usual 3g serve, about 10 cups. That's roughly $4.50 a cup, well under a café matcha latte.

Do I need special tools?

A bamboo whisk gives the classic foam, but a milk frother or a small jar with a tight lid works fine. Our usual latte: 3g matcha, 40ml water at 75°C, then 130ml milk. Ratios are personal, so adjust to taste.

How do I keep it fresh once opened?

Matcha does not expire in the usual sense, but colour and flavour gradually fade once the tin is open. For the best cup, aim to finish it within about 2 to 4 weeks. Keep the tin sealed, cool and away from light. If you store it in the fridge, let it return to room temperature before opening so moisture does not get in.
